HISTORY & PROCESSING OF PU ERH TEA
Pu Erh Tea forms part of the Eve's tea collection and originates from Pu Erh, Western China, near Burma. For over a thousand years, the broad leaf Camellia Sinensis plant has been grown in this region.
Normal green tea processing is applied, but the skills and techniques lie in the fermentation, which could take months and even years to age the tea. During the fermentation process the green tea changes into a darker colour, the slower the aging process the more mellow the taste.
Pu Erh Tea is traditionally made into the shape of Tea Bricks, Tea Cakes or Tea Balls to allow for convenient storage and transport. This was passed down from the ancient times when farmers would have to travel long distances to present the tea to the Emperor. This tea has gained popularity in Hong Kong, Taiwan, Japan and the West, it is often paired with a heavy meal such as dim sum.
